Crust-less Quiche for Dinner!


Breakfast:
½ cup plain oatmeal, cooked with fat free milk, in microwave
Topped with plain cinnamon
2 tbsp of walnuts
5 oz. glass of OJ
A cup of coffee, black





 
Lunch:  Spicy Southwestern Skillet
EVOO - ½ Red onion – Garlic, all sautéed in pan, with the following ingredients:
Red pepper flake (this is what makes it spicy!)
Salt
½ cup frozen corn
½ cup white beans
Handful of cherry tomatoes, sliced
1 cup of baby spinach
1.5 cups of baby arugula
2 small mozzarella balls, halved, served on the side
Water with lemon


 
Snack: 
¼ cup lightly salted peanuts
Glass of fat free  milk



Dinner: Broccoli Rabe & Bacon Crust-less Quiche  (Recipe below)
Made with:
  EVOO
  garlic
  red pepper flake
  salt
  1 bunch of broccoli rabe
  4 slices of turkey bacon
  4 eggs
  1 cup of fat free milk
  1/2 cup of cheddar cheese
Glass of water with lime


Dessert:  1 Gala Apple, Water




Amy’s Crust-less Broccoli Rabe & Bacon Quiche Recipe:


Heat pan on stove with 1 tbsp of EVOO and add 2 cloves of garlic, chopped.  After a minute or so, add the cleaned bunch of broccoli rabe and half a cup of water and cover to cook for 20 minutes, checking on it occasionally to turn it around and to make sure there is enough liquid in the pan to properly steam the broccoli.  Once done add 1 tsp of red pepper flake (for heat) and a pinch of salt, mix, and take off heat.

Meanwhile preheat oven to 350 and grease a casserole dish with canola oil spray.  Put broccoli rabe mixture into the casserole dish.

Put 4 slices of turkey bacon between paper towels on a plate and microwave for 2 minutes, turn and do another 2 minutes – more if needed, until it is crunchy.  Once cool enough to touch, break up the bacon into little pieces, and add to casserole dish with broccoli rabe.

Then in a separate bowl, break 4 eggs and scramble up, adding 1 cup of fat free milk.

Pour mixture on top of broccoli & bacon in casserole dish and top everything with ½ cup cheddar cheese.

Bake for 30 minutes, or until eggs are set.  


Serve for breakfast, brunch, lunch or dinner!  Would be great with a side salad or sliced apples.
