Cilantro Almond Pesto Chicken Veggie Blast for Dinner!


Daily Tidbit:  There has been a lot of talk about plate size and how it affects the amount of food we eat: the bigger the plate the more we eat supposedly.  Other studies are now focusing on the color of plates as well and how that influences how much we eat.  If you Google "plate size and "diet"  there are endless links to discuss the matter.  My plates are on the larger size (11 inches, but 3.5 are an elevated 'rim' which we don't put food on typically) and I like them, I don't like a crowded plate.   I also like my plates being white; they show off the colors of the food I'm about to enjoy, as the old saying goes "we eat with our eyes first"! 




Cheerios Cereal with Raspberries & Peanut Butter for Breakfast!



Breakfast: Bowl of Cereal
1 cup of Cheerios
1 cup of Fat Free Milk
½ cup fresh Raspberries
1 tbsp of All Natural Low Sodium Peanut Butter on top
5 oz. cup of OJ
Regular Coffee, black




Before I wrapped it up:  Roasted Red Pepper Hummus, sliced Red Onion & Fresh Basil



Lunch Picnic: Hummus Sandwich & Veggies
“Small” flour wrap with Roasted Red Pepper Hummus, Fresh Basil & Red Onion
Baby Carrots, raw, about 20
Cucumber slices, about 20
1 Banana
Water
Regular Coffee, black



Snack: ¼ cup of dry roasted lightly salted, Peanuts, Fat Free Milk

Dinner:  Chicken Veggie Blast!
Chicken Breast Tenders marinated in EVOO & salt, sautéed in pan until brown
Topped with Cilantro Almond Pesto (made in food processor with 1 clove of garlic, salt to taste, a handful for Cilantro & 2 tbsp of toasted Almonds and EVOO of course)
Served with:  Roasted Red Peppers, Cherry Tomatoes, Red Onion, Corn, Red Kidney Beans and Avocado and tossed with EVOO & fresh squeezed Lemon juice


Note:  I would typically eat the above meal with a little Goat Cheese or Feta or Fresh Mozzarella on top, but I am trying to eat a cleaner and fresher meal to make up for all the indulgences this week!

Tip:  The food processor is another magical kitchen tool.  So many things can be made quickly with this gadget when it is ready to go just sitting on the counter.  I use it every week making things such as: hummus, salsa & different types of pesto, as well as for chopping, grating, and slicing veggies like carrots.  Though one of the more expensive kitchen tools, it can be used for many things and can save you time and energy and help you quickly prepare fresh ingredients for a last minute delicious meal or snack!
