Beef & Bean Chili for Dinner!


Daily Tidbit:
I love Goat Cheese! It is good on salads, meat, pizza, pasta, omelets, sandwiches, burgers…almost everything tastes better with a little Goat Cheese!  AND:

 “Compared to cow's milk products such as cream cheese, goat cheese is lower in fat, calories and cholesterol. It also provides more calcium than cream cheese. Even though goat cheese has fewer calories, it has a full, rich and creamy flavor.”





Breakfast: Oatmeal with Walnuts
½ cup plain Oatmeal, cooked with Fat Free Milk, in microwave
2 tbsp of plain Walnuts
Plain Cinnamon sprinkled on top
5 oz. glass of OJ
Regular Coffee, black



Spinach & Eggs Over Easy Salad for Lunch!



Lunch: Spinach & Eggs Over Easy Salad
Baby Spinach, tossed with toasted Pine Nuts, sliced Red Onion & Goat Cheese
Dressing:  EVOO & Red Wine Vinegar
2 Eggs, over easy, on top
10 raw baby Carrots
Water with Lime


*I love Eggs cooked “Over Easy”, so all the yellow yumminess of the yolks runs out and mixes with everything else on a plate.  It is especially good on top of salads because the yolks ooze out and mix with the oil and vinegar to create a yummy creamy salad dressing!  Obviously I took the pic before cutting up the eggs and making the yummy yellow oozy mess all over my plate.



Spinach Pecan Pesto Pasta Bake with Peas & Turkey Bacon



Snack:  Finally finished the end of the Pesto Pasta Bake leftovers for a snack!  Fat Free Milk.



Dinner: Beef & Bean Chili
Inspired by Ellie Krieger’s recipe with loads of Carrots, Bell Peppers and Beans!
Served with Plain Lower Sodium Toasted Organic Yellow Corn Tortilla Chips (yes, I eat a lot of these!)
White Wine
