Sun. June 17th


Red Onion, Garlic & Provolone Omelet for Brunch!




Daily Tidbit:  Okay, full disclosure, the plates and the food may be looking a little different than usual... we are away on Vacation!  When you are away from home it is easy to fall away from good eating habits and it is a little harder to maintain the ones which seem second nature at home.  And then there is cooking in someone else's kitchen, which is always more time consuming and challenging when you don't have the tools you are used to and don't really know where things are kept.  We are managing pretty well so far and I managed to basically stay on track and even have a couple yummy meals today!  Meanwhile it is important to remember - this is Vacation!  And what is Vacation without some yummy treats?!




Brunch: Father's Day Omelet!
3 Egg Omelet with Red Onions, Fresh Garlic, & Provolone Cheese
1/2 cup of fresh Blueberries
1/2 Avocado
5 oz. cup of OJ
Regular Coffee, black



Snack: 1/4 cup dry roasted, lightly salted Peanuts, 3 dried Apricots, Water






Snack:  Raw Baby Carrots with Sun dried Tomato Hummus (store bought, as pictured above) & 10 Corn Tortilla Chips (10 chips of this particular brand was 1 serving, and they were still mostly whole pieces so it was easy to figure it out).
Regular Coffee, black




Pan Seared Sea Scallops for Dinner!


Dinner:  Pan Seared Scallops with Roasted Potatoes & Salad
6 large Sea Scallops pan seared in butter
Yukon Gold Potatoes, roasted with salt & peper
Organic mixed green salad tossed with raw mushrooms, tomatoes, cucumbers & topped with 4 bean salad (store bought) and Ranch dressing
Gin and Tonic

Dessert:  This is a rarity, but I was not craving something sweet, but rather  something savory at dessert time (I am chalking this up to the fact that because we had a late Brunch, I never got a real Lunch today).  I enjoyed the creamy Ranch dressing from my salad so much that I decided to make another salad, like the one I had at dinner time.
