Tomato Mozzarella Basil Salad with Eggs for Lunch!


Daily Tidbit:  Blueberries are in season!  This is reason to celebrate in my house.  We are lucky to have a fantastic Farmer’s Market nearby where I load up on all our fruits and veggies for an amazingly low price all year long.  We also get all our eggs, milk and beef there too.  It is a wonderful thing to visit the market and see the very cows which provide your milk and ice cream just hanging out and munching on fresh green grass a few feet away.  We wave to the beef cattle munching on grass in the next field too.  This is one of the benefits of living in Pennsylvania farm country!

Breakfast: Oatmeal with Walnuts & Fresh NJ Blueberries
½ cup plain Oatmeal, cooked with Fat Free Milk, in microwave
2 tbsp of plain Walnuts
½ cup Fresh Blueberries
Plain Cinnamon sprinkled on top
5 oz. glass of OJ
Regular Coffee, black



Lunch: Eggs with Tomato Mozzarella Basil Salad
2 Eggs cooked Over-Easy
I smeared some of the Spinach Bean Dip from yesterday (Recipe on June 11 post) all over the plate and then covered it with:
Tomato slices
Mozzarella balls, sliced
Basil Chiffonade (3 leaves)
Topped the whole dish with 1 tsp of EVOO
Water with Lemon
Regular Coffee, black



Snack:  ¼ cup dry roasted lightly salted Peanuts, Fat Free Milk

Snack:  1 Breaded Fish Fillet (uncooked white fish from freezer section of Target), Fat Free Milk




Slow Cooker Beef with Sour Cherries for Dinner!


 
Dinner:  Slow Cooker Beef with Sour Cherries

So I bought a jar of sour cherries last week and have wanted to try them in a slow cooked meal with beef.  I did an online search and found this recipe below. 


The following ingredients went into my Slow Cooker:

1 pound Beef Cubes
1 cup of low sodium Chicken Stock
1 cup sour Cherries
2 tbsp Balsamic Vinegar
1 sweet Onion, sliced
4 cloves of Garlic
Salt/ Pepper
1 tsp Red Pepper Flake

I cooked it for 8 hours on low and then served it with steamed Broccoli & fresh cut Scallions
Red Wine

Note:  We really enjoyed this dish,however, I felt it was more of a winter time meal.  Very comforting and yummy in a “its snowing outside” kind of way.  Perhaps next time, a little vinegar or fresh lime juice would help perk it up!



Dessert:  Gala Apple, Water
