Quiche & Quinoa Salad for Lunch!


Daily Tidbit:  Maybe you have already heard the recent buzz on Quinoa...an amazing complete protein source from the plant world.  My cousin brought an amazing Quinoa salad for us to enjoy for lunch (her recipe is below!)  For those of you new to Quinoa, don't be intimidated!  It is easy to prepare and easy to enjoy.  It can be used in place of couscous or pasta or rice in all sorts of meals and salads.  For more info check these out:

Toasted Oat Cereal with Nuts & Fruit for Breakfast!


Breakfast:  Cereal with Nuts & Fruit + a special treat!
Bowl of Toasted Oat Cereal (Joe's O's in this case, the Trader Joe equivalent of Cheerios, which I think are a tad more crunchy)
Fat Free Milk
Strawberries & Blueberries
Walnuts
5 oz. cup OJ
Regular Coffee, black

Special Treat:  Small serving (3 bites) of a delicious fresh baked Bear Claw from the town's General Store (pic below).  Thanks Ed, this is what Vacation is all about!

Priscilla's Quiche!


Lunch:  Quiche & Quinoa
Aunt Priscilla's Quiche Lorraine with Broccoli, Mushrooms, Onions & Bacon (totally decadent and totally delicious!)
Quinoa Maple Salad (My cousin's recipe below)
"Reduced Fat" Kettle Cooked Potato Chips, Mesquite flavored
Iced Regular Coffee, black

Tip:  "Kettle Cooked" Potato Chips are lower in fat than regular Potato chips!  And the "Reduced Fat" version has 40% less fat!



Snack: Cherry Coke Zero, on ice, Tons of Almonds (I was going to eat just 12, but then ended up eating way more - they were good!  Dry Roasted, Unsalted)
Bottle of Water




Pizza & Salad for Dinner!


Dinner: Pizza & Salad
1 slice of Portobello Mushroom, Black Olive & Onion Pizza
2 slices of Plain Pizza (Yes, 1 more slice than the  picture shows!)
Mixed green salad with Cucumbers, Tomatoes, Peppers & Steak leftovers from last night tossed in Honey Balsamic Vinaigrette
White Wine
Water




Dessert:  Swollen ankles.  Many fun treats today, so I passed on dessert and just had another bottle of Water!





Melissa's Quinoa Maple Salad Recipe:

Quinoa
Dried Cranberries
Baby Spinach
Walnuts
Dressing:  EVOO, Balsamic Vinaigrette, & Maple Syrup

This salad was delicious!  And it could easily be turned into a main meal for lunch or a light summery dinner.   It is full of Vitamins and Protein, thanks to the Quinoa!
