Olympian Mariel Zagunis Hearty Zucchini Soup for Dinner! (Health Mag Pic)

Daily Tidbit:  Mariel Zagunis, 2 time Gold Medal winning Olympian (Fencing!) shared a fav recipe with Health Magazine, so I decided to try it!  When an Olympian says this is what I eat to stay full - I listen!  Her "Hearty Zucchini Soup"looked and sounded yummy.  I wanted to add a little more protein so I added a can of White Cannellini Beans and I added some Cilantro and fresh Lemon Juice for zip.  Verdict - good soup!  I bet it will taste even better tomorrow and will make for a great late afternoon snack!  Check it out:

Breakfast:  Oatmeal with Walnuts
1/2 cup plain Oatmeal (this is a pre-cook measurement)
microwaved in Fat Free Milk
2 tbsp Walnuts
2 shakes of Plain Cinnamon
5 oz. OJ
Regular Coffee, black

Wrap with Spinach Puree
Adding Roasted Red Pepper Hummus next!
Lining up the fresh Mozzarella
Added 1 slice of Turkey Bacon
Lunch Wrap with Blueberries!


Lunch:  Turkey Bacon, Fresh Mozzarella & Hummus Wrap!
1 Whole Grain Santa Fe Wrap
1 slice Turkey Bacon
2 oz. Fresh Mozz 
Roasted Red Pepper Hummus Wrap (Recipe link below)
Spinach Puree (Recipe below)
1/2 cup of fresh Blueberries
Water with Lemon
Regular Coffee, black

Note: This is one of those meals that comes together when I need to clean out the fridge!  I have lots of little bits of things left in containers and it typically can all go together into a salad or wrap like this!!  This particular sandwich was a bit messy, I ended up eating it with a knife and fork - apparently 1 sauce is enough for a wrap!

Spinach Puree Recipe: I put a couple handfuls of fresh baby Spinach into my food processor and drizzled EVOO in while it was processing. Voila!

Now I have a handy container in the fridge so I can easily add it to things, like Wrap, Salad Dressings, Pasta, Veggies OR my kids fav "GREEN" Organic Macaroni & Cheese with Kidney Beans!

Dinner: Mariel Zagunis Hearty Zucchini Soup
Recipe for soup at link in Daily Tidbit, plus 1 Can of Cannellini beans, drained and rinsed, and cut up Cilantro & fresh Lemon Juice.
2 cups of Soup
Bowl of Organic Corn Tortilla Chips on the side
White Wine
