Zaalouk with Chicken & Onions for Lunch!


Daily Tidbit:  Zaalouk is a popular cooked Eggplant & Tomato salad eaten across North Africa.  It is a yummy and healthful dish jam-packed with Veggies and is super easy to make if you have a Slow Cooker.  I made mine yesterday and put it in the fridge overnight so it was ready to go for a nice chilled lunch today!

Breakfast: Oatmeal with Walnuts
½ cup plain Oatmeal (cooked with Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
2-3 shakes Plain Cinnamon on top
5 oz. glass of OJ
Regular Coffee, black

Algerian Zaalouk for Lunch!



Lunch: Algerian Zaalouk with Poached Chicken
2 cups of Zaalouk (Recipe below)
Topped with fresh squeezed Lemon juice & fresh cut Cilantro
1 Poached Chicken Breast Tender with Caramelized Onions 
Cucumber Lemon Water
Regular Coffee, black

Snack:  1/2 cup of Pistachios in shells (which roughly equals 1/4 cup of actual nuts), Fat Free Milk

Whole Wheat Roasted Garlic Pizza for Dinner!


Dinner: Pizza Night!
Whole Wheat Pizza Dough (from the refridgerator case of Trader Joe's)
1 large head of roasted Garlic 
No Salt Added Marinara Sauce (Trader Joe's has a yummy one)
8 oz. bag of Mozzarella cheese
White Wine


This pizza looks like a standard plain pie, however, before adding the sauce or cheese I smashed and rubbed one whole head of roasted garlic cloves into the crust.  It was a powerhouse of flavor; delicious!


And yes, I ate twice what's shown in the pic -  yes, 4 pieces/ half of the pizza :)

Amy's Algerian Zaalouk Recipe:

Zaalouk is a popular cooked Eggplant & Tomato Salad eaten across North Africa.  To make it, put the following ingredients into a Slow Cooker:

1-2 tbsp EVOO
1 Vidalia Onion, chopped
2 large cloves of Garlic, sliced
1 large Eggplant, cut into cubes (I leave the skin on for extra Fiber & all the antioxidants it contains, but you can skin it if you want a smoother texture!)
1/2 Red Pepper, sliced
1 can of no salt added diced Tomatoes
1/2 cup of Water
2 tbsp Tomato Paste
1 tbsp Cumin
1 tbsp Paprika
1 tsp Salt
2 shakes of Cinnamon

Mix everything inside Slow Cooker and cook on "Low" for 8 hours.  Serve with fresh squeezed Lemon on top and fresh cut Cilantro.

This dish can be served plain as a salad, or with Couscous, Rice, Pasta or as a dip with bread.  I enjoyed it served alongside some Chicken with Onions for Lunch today!
