Olympian Kara Goucher's "Energy Revving Quinoa" for Lunch!


Daily Tidbit:  Today I tried another Olympian Recipe courtesy of Health Magazine's July/ August 2012 Issue:  Kara Goucher's "Energy Revving Quinoa"!  Kara is a Marathon Runner and the story of how she ran 5 miles the day her son was born impressed me - talk about needing energy!  I made it for lunch, with a couple tweaks.  It was a perfect hot summer day salad.  Here is the link to her recipe if you want to try it out!

Oatmeal with Walnuts & Blueberries for Breakfast!

Breakfast: Oatmeal with Walnuts & Fresh Blueberries
½ cup plain Oatmeal (cooked in Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
½ cup Fresh Blueberries
2-3 shakes Plain Cinnamon on top
5 oz. glass of OJ
Regular Coffee, black

Lunch:  Oympian Kara Goucher's "Energy Revving Quinoa Salad"
The link to her Recipe is above in the Daily Tidbit.  I tweaked the amounts a little, but used all her ingredients and added some Cilantro & Arugula, it was a great and refreshing salad for a hot day!

1/4 cup cooked Quinoa (I decreased the amount of Quinoa)
1/2 cup beans (I increased the amount of beans, a mixture of Black & Kidney)
1 Plum tomato
1 Scallion
1 tsp EVOO
Bunch of Cilantro, chopped
1/4 cup of Arugula, chopped
2 tsp fresh Lemon juice
salt/ freshly cracked pepper
Water with Lemon
Regular Coffee, black

Peanuts make for a super filling snack!

Snack: 1/4 cup dry roasted, lightly salted Peanuts, Fat Free Milk

Arugula Apple & Turkey Bacon Salad for Dinner!

-Dinner:  Arugula Apple & Turkey Bacon Salad made with Sunflower seeds, fresh Mozzarella, Quinoa, Plum Tomatoes, Gala Apples, fresh Lime Juice and Trader Joe's Balsamic Vinaigrette
White Wine

Dessert:  Fresh Crisp delicious Gala Apple, Water

Guacamole with Corn Tortilla Chips before Dinner!



Amy's Guacamole Recipe:
2 ripe Avocadoes
3 tbsp thinly slice Red Onion
1 tbsp EVOO
1/2 tsp Kosher salt
Juice from 1/4 fresh Lime
Bunch of Cilantro, chopped
1/2 thinly sliced Plum Tomato 

Smash everything together in a bowl and serve!
