My fav way to eat Beets is with Goat Cheese in a Salad, like I did Lunch & Dinner today!

Toasted Oat Cereal with Walnuts & Strawberries


Breakfast: Joe's O's Toasted Oat Cereal with Walnuts & Strawberries
1 cup of Joe's O's Toasted Oat Cereal
1 cup of Fat Free Milk
1 cup of Fresh Strawberries
2 tbsp Walnuts
5 oz. Orange Juice
Regular Coffee, black

Roasted Red Pepper Wrap with Cheese Spread & Salad

Lunch:  Red, Green & White Wrap & Salad
1 Whole Wheat Wrap topped with Ricotta Goat Cheese Spread (recipe below)
2 tbsp White Beans
1/4 cup Arugula
1 Roasted Red Pepper, sliced
Salad:  Green Leaf Lettuce, White Onion, Beets, toasted Almonds, & Tomatoes in Balsamic Vinaigrette
Water
Regular Coffee, black

Slow Cooker Indian Saag

Snack: 1 cup of Slow Cooker Indian Saag, mixed with 2 tbsp of Brown Basmati Rice  (recipe below)
Cup of Fat Free Milk

Cabbage & Ground Beef Gratin

Dinner: Cabbage Gratin with Ground Beef
Cabbage Gratin with Ground Beef (Deliciously steamed Cabbage cooked Gratin style mixed with Ground Beef Meatballs & Potatoes in a thickened Bechamel with Cinnamon and fresh Lemon, cooked by my Mother in law!)
Argula Salad, tossed with toasted Pine Nuts, Goat Cheese, & Beets in a Champagne Vinaigrette (Trader Joe's)
1/2 piece of Mhadjeb
White Wine

Bananas with Pecans & Chocolate Syrup!


Dessert: No Ice Cream Sundae
1 Banana, sliced
1 tbsp of chopped Pecans
1 tsp of Trader Joe's Organic Chocolate Sauce
Water

*Check out your fav Chocolate syrup, most are mainly Corn Syrup! listing High Fructose Corn Syrup as the first ingredient and Corn Syrup as the second!  Plus they are full of Artificial Flavors!  Because Trader Joe's is Organic, there is no Corn Syrup in sight, nor anything Artificial, just Organic Sugar, Cocoa, Non-Fat Milk, Vanilla, Xanthan Gun, Soy Lecithin & Citric Acid.  My feeling is, if you are going to enjoy Chocolate or give it to your kids - make sure it is in fact Chocolate!

RECIPES:
 
Ricotta Goat Cheese Spread Recipe:
Into food processor put:  1/2 cup of Goat Cheese, 1 cup Part Skim Ricotta Cheese, 1 tbsp Lemon Zest, 1-2 tbsp EVOO and process.  Smooth, creamy & delicious!


Slow Cooker Bean Saag Recipe:
I took my favorite recipe for Chicken Saag from the book "Healthy Indian Cooking" by Shehzad Husain & Manisha Kanani and converted it to a Slow Cooker preparation because I was going out for the day and wanted my family to enjoy a nice lunch that was ready and warm in time for them to eat.   They loved it and it still tasted great today for my little Veggie Boost Snack!
Put 16 oz of fresh Baby Spinach into a pan, cover and cook on medium heat for 5 minutes.  
Meanwhile into the Food Processor put: 1 inch cube of fresh Ginger, 2 cloves of Garlic, 1 can of Fire Roasted Green Chillis.  Once Spinach is done cooking on stove add that as well, along with 1/4 cup of water, and process until smooth.
Then into Slow Cooker put:  1 tbsp EVOO, 1/2 Sweet White Onion, diced, a couple turns of fresh Black Pepper, 4 diced Plum Tomatoes, & 2 tsp of Curry.  Then add Spinach mixture from Food Processor and another 1/2 cup of Water, along with 1 can of White Cannellini Beans (which have been rinsed & drained).  Stir the contents of the Slow Cooker and cover, leaving on Low Heat for 4 hours.

Serve with Brown Basmati Rice, Plain Yogurt and a squirt of fresh Lemon.
This would have been great with some Boneless, Skinless Chicken Thighs, however, we didn't have any, so I went the Vegetarian this time!
