Curry Tuna Fish Salad Wrap with Salad for Lunch!


Daily Tidbit:  We have all heard about switching to Whole Grains for better health.  Today I incorporated them into my Lunch and Dinner: a Whole Wheat Wrap at Lunch and Whole Wheat Couscous at Dinner.  But just eating Whole Wheat products can become monotonous, here are some other whole grains worth trying:

Oatmeal with Walnuts & Blueberries


Breakfast: Oatmeal with Walnuts & Fresh Blueberries
½ cup plain Oatmeal (cooked in Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
½ cup Fresh Blueberries
2-3 shakes Plain Cinnamon on top
5 oz. glass of OJ
Regular Coffee, black

Curry Tuna Fish Salad Wrap
Lunch: Curry Tuna Fish Salad Wrap with Bacon & Arugula Salad
1 Medium Whole Wheat Wrap, stuffed with Curry Tuna Fish Salad, 1 slice of Turkey Bacon and some of the Arugula Salad (recipe below)
2 cups Arugula Salad (Arugula Greens tossed with Red Onion, Avocado, & Cherry Tomatoes with EVOO & Red Wine Vinegar)
2 Cornichons (little pickled Gherkin Cucumbers)
Water with Lemon
Regular Coffee, black

Snack:  1/4 cup dry roasted, lightly salted Peanuts, Fat Free Milk

Traditional Algerian Couscous


Dinner:  Traditional Algerian Couscous Dish
1 and 1/2 plates of Whole Wheat Couscous Grain topped with a Chicken Vegetable Tomato based stew, containing Potatoes, Tomatoes, Carrots, Onion, & Chick Peas, Tomato Paste, Water, Cinnamon, Paprika, salt/ pepper (made by my Mother in Law!)
White Wine

Dziriate


Dessert:   1 Dziriate & 1/2 Gala Apple

I couldn't resist the urge to follow my Algerian meal with an Algerian dessert!

RECIPES:


Tuna Fish Salad Recipe:
2 Cans of Tuna Fish (Chunky Light Tuna)
2 tsp of Yellow Curry
1 tbsp of EVOO
salt/ pepper

Note:  I wanted to add in Capers as well, but mid way through making it realized we had run out of them!
