Salmon, Broiled Veggies & Raw Corn Salad for Dinner!

Daily Tidbit:  I was recently reading about eating Corn raw and how wonderfully sweet, juicy and crunchy it is, so I decided to try it out in a summery salad (pictured above).  Verdict:  delicious!  All these years I've been boiling my corn unaware I could enjoy it this way!

Oatmeal with Walnuts & Blueberries

Breakfast: Oatmeal with Walnuts & Fresh Blueberries
½ cup plain Oatmeal (cooked in Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
½ cup Fresh Blueberries
2-3 shakes Plain Cinnamon on top
5 oz. glass of OJ
Regular Coffee, black

Omelet & Salad for Lunch!

Lunch: Omelet & Salad
Mushroom Red Onion Omelet (roughly 2 eggs worth, recipe below)
Arugula Spinach Feta Salad  (roughly 2 cups worth, recipe below)
Water with Lemon

Mushroom Onion Omelet Recipe:
In heated Cast Iron Pan add 1 tbsp Canola oil, 1 cup of raw sliced Mushrooms, 1/4 cup sliced Red Onion & 1 sliced clove of Garlic.  Once veggies are cooked and browned, add salt, mix and then crack 8 Eggs into the pan.  Scramble Eggs inside the pan, mixing with Veggies and cook on medium heat.  Once Eggs are cooked, turn off heat and add 1/2 cup of shredded Cheddar Cheese, stir until melted and serve!

Arugula Spinach Feta Salad Recipe:
1 handful of Arugula
1 handful of Spinach
2 tbsp of Sunflower Seeds (salted)
1/4 cup of Dried Cranberries
1/2 cup of Fat Free Feta Cheese
1/2 large Zucchini, diced
Dressing:  EVOO & juice from 1/2 Lemon


Note:  Most fat free cheeses don't have much flavor or their texture is compromised, so I don't waste money on them.  In this case I accidentally bought this Feta not realizing it was fat free, but it is great and I would buy it again no question!  Brand:  President; found at Sam's Club.

Snack:  1 Lindt Dark Chocolate Ball with Regular Coffee, black

Grapes for Snack!

Snack:  1 cup of Red Grapes

Dry Roasted, Lightly Salted, Peanuts for Snack!

Snack:  1/4 cup of dry roasted, lightly salted Peanuts, Fat Free Milk

Algerian Mhadjeb


Dinner:  Salmon, Raw Corn Salad & Broiled Veggies with Mhadjeb
Salmon fillet (Sprayed with Canola Oil, topped with salt and baked in Toaster Oven for 12 minutes at 350)
Broiled Veggies:  Zucchini, Yellow Squash & Red Onion (recipe below)
Raw Corn Salad (recipe below)
Algerian Mhadjed (thin grilled bread stuffed with Veggies & spices)
White Wine




Note:  Mhadjeb is an Algerian pancake-like crepe filled with Onions & Tomatoes & Spices and cooked on a grill.  My husband's Aunt made ours (a delicious treat!), but if you are an adventurous cook and want to try making some of your own, check this recipe out:

Broiled Summer Vegetables


Broiled Vegetable Recipe: Slice Veggies and place on sheet pan which has been covered in Canola oil Spray.  Spray more Canola Oil on top of Veggies.  Broil on high for 6 minutes and turn over for another 4-6 minutes until browned.  Remove from Oven, Salt and serve!  




Raw Corn Salad


Raw Corn Salad Recipe:  Corn cut from the Cobb and tossed in bowl with a chopped and/ or sliced: fresh Cilantro, Red Grapes, Cucumbers, Cherry Tomatoes and tossed with juice from 1/2 Lime and 1 tsp of EVOO.  Marinated 2 hours in fridge.

Dessert:
  No dessert, but I had half of a grilled Kielbasa at a late evening BBQ with some White Wine!
