Southwest Tortilla Saute for Dinner!


Daily Tidbit:  If you are looking for an exciting departure from your regular tea regimen I recommend Red Chai!  I have a box in the drawer which I often forget about, but when I see it and sit down to enjoy a cup it is like a little escape.  It is sweet and spicy, full of wonderful Cinnamon, Clove and Vanilla flavors.  And of course, it is high in antioxidants!

Frosted Shredded Mini-Wheats with Walnuts

Breakfast: Frosted Shredded Mini-Wheats with Walnuts & Milk
1 cup Frosted Shredded Mini-Wheats
1 cup Fat Free Milk
2 tbsp Plain Chopped Walnuts
5 oz. Orange Juice
Regular Coffee, black

Spicy Almond Butter Veggies over Arugula

Lunch: Spicy Almond Butter Veggies over Arugula
I just heated up the leftover 1-2 cups of Spicy Almond Butter Veggies (recipe below) and put atop 2 handfuls chilled Arugula to make a warm salad!

Snack: No food, but enjoyed a cup of Organic Spiced Rooibos Ruby Red Chai Tea, Plain & hot

Southwest Tortilla Saute

Dinner: Southwest Tortilla Saute
1 Chicken Breast tender, sauteed in Canola oil with salt, chopped and added back to Cast Iron pan with fresh Corn cut from 1 Cob, 1/2 can of "Seasoned" Black Beans and 2 Soft Corn Tortillas chopped into bite site pieces, mixed and heated through.  Plated and topped with shredded Cheddar Cheese, 1/2 cup fresh Salsa (recipe below) & 1/2 Avocado
1 O'Doul's 


This was basically like making soft corn tacos, but a lot less messy because instead of making everything and trying to keep it inside a taco I just chopped up the soft Corn Tortilla Tacos and added them to the mix!  Then you get to eat everything all together with a fork or spoon, all warm and melty.  YUM.
