Baked Salmon with Spinach Potato Cake

Daily Tidbit:  I just picked up a copy of the CarbLover's Diet Cookbook  at the library yesterday.  Though I am not a big supporter of structured diets like these, I wanted to flip through in hopes of getting inspired to try some new meals.  To my surprise lots of things I already prepare were listed, but I did get some new ideas, such as using Grated Potato in meals, which I did tonight with the Spinach Potato Cake (pictured above)  Potatoes are Low Cal & High Fiber.  Here are 6 more reasons to eat them:

Frosted Mini-Wheats with Walnuts

Breakfast: Frosted Shredded Mini-Wheats with Walnuts
1 cup Frosted Shredded Mini-Wheats
1 cup Fat Free Milk
2 tbsp plain chopped Walnuts
1/4 cup fresh cut Pineapple, on the side
Regular Coffee, black

Lunch: Green Thai Curry Veggies with Beans
12 oz bag of frozen Veggies:  Broccoli, Carrots, Onions, Baby Cob Corn, Sugar Snap Peas, Mushrooms, Water Chestnuts & Red Peppers sauteed in a little Canola Oil with 1/2 cup Black Beans and 2 tbsp slivered Almonds and tossed in 1/4 cup Green Thai Curry Sauce
Water with Lime
Green Tea, plain & hot

Snack: 1 Lindt Dark Chocolate Truffle

Baked Salmon with Spinach Potato Cake

Dinner: Baked Salmon with Spinach Potato Cake

1 Fillet of Wild Caught Alaskan Keta Salmon, baked at 350 for 12 minutes in toaster oven
1 Spinach Potato Cake (recipe below)
1/2 Avocado
White Wine

Dessert: 1 Local Red Delicious Apple, Water

RECIPES:
Spinach Potato Cake Recipe:

1 tbsp Canola Oil
1 large Yukon Gold Potato, grated
1 frozen box of chopped Spinach, thawed and excess water squeezed out
1/4 cup Cheddar Cheese
Parmesan Cheese to taste
In heated Cast Iron Pan add Canola Oil and grated Potato and salt to taste, fry for a couple minutes.  When Potato begins to brown, add Spinach in and Cheddar Cheese and flatten into a cake on the Pan's bottom.  Add Parmesan cheese on top and put into Broiler until Parmesan Cheese brown a little on the top, and then serve!
