Quick & Easy Chicken Cordon Bleu for Dinner!

Frosted Shredded Mini-Wheats with Walnuts

Breakfast: Frosted Shredded Mini-Wheats with Walnuts
1 cup Frosted Shredded Mini-Wheats

1 cup Fat Free Milk
2 tbsp Plain Chopped Walnuts
5 oz. Orange Juice
Regular Coffee, black

Zucchini Log "Sandwiches" with Avocado Dip & Radishes

Lunch: Open Faced Zucchini Log "Sandwiches" with Avocado Dip
3 long slices of Zucchini, 1/3 inch thick each
Avocado Dip (made simply with 2 Hard Boiled Eggs + 1 Avocado & salt in food processor)
Red Onion, chopped
Radishes, sliced
Pan Seared Corn, sprinkled on top
Water with Lime
Plain Green Tea, hot
 
This was an experiment & it came out great!  I was able to hold the Zucchini like an open faced sandwich and eat it easily and the Avocado Dip came out yummy and no Oil or Mayo was needed!  A little strange?  Maybe, but it was a great way to get lots of Veggies and Protein and try something new! I would definitely make this again.

Quick & Easy Chicken Cordon Bleu

Dinner: Amy's Quick & Easy Chicken Cordon Bleu
1 Chicken Breast Pounded flat and sauteed in a little Canola Oil
1 thick slice of Tomato,
1 slice of Turkey Bacon &
1 slice Provolone Cheese, all layered on top the Chicken and broiled to a golden brown
Served with Arugula Salad with Red Onion, Tomatoes & Roasted Zucchini tossed in a Lemon Tarragon Vinaigrette
Fat Free Milk


Yes, this is not your traditional French Chicken Cordon Bleu rolled with Ham and Swiss covered in bread crumbs and baked until golden brown.  That sounds a bit too fancy, messy and time consuming for my life right now.   Quickly cooking thin pieces of Chicken Breast in a Cast Iron Pan on the stove and piling it up with ingredients to throw under a Broiler for a few minutes sounds much more my speed.  In fact, this meal took less than 20 minutes, start to finish.  There was no heating up the kitchen with the Oven, no messy egg and bread crumb dishes to clean, nor extra time needed for waiting for it to bake!  If you love Ham and Swiss cheese (as opposed to Bacon and Provolone) you can sub those ingredients easily in this preparation.  The traditional Mornay sauce is also a bit rich for those of us watching our Saturated Fat and Calories; the Salad Dressing on the Plate mixed with the Au Jus from the Chicken was all the sauce I needed!  Delicious!  Will be making this again soon for sure.

Dessert: Lots of Cheese...I'd say roughly 10 bite sized cubes of Pepper Jack & Cheddar (at Back to School night!)

RECIPES:
 

Amy's Quick & Easy Chicken Cordon Bleu Recipe:

Start by getting a pan hot on the stove.  Meanwhile, pat Chicken Breasts dry with paper towels.  Wrap Dry Chicken Breasts in Wax Paper and Pound Flat with Kitchen Mallet.  Spray or Brush Chicken Breasts with Canola Oil & season with Salt/ Pepper.  Once pan is hot add Chicken Breasts, allow each side to brown thoroughly before turning, remove from pan when Chicken reaches safe temperature: 165 degrees, according to the USDA:

Place Chicken in Broil safe dish and pile on the Turkey Bacon, sliced Tomato and Provolone Cheese.  Broil until cheese starts to brown and bubble on top.  Meanwhile add a little Low Sodium Chicken Broth to pan and deglaze the pan, scraping up the brown bits for a delicious sauce to pour on top of the Chicken when plating.

Serve with Veggies or Salad or put it on bread for a sandwich!
