Clementines

Daily Tidbit:  It is that time of year again....boxes of Clementines are showing up everywhere!  Yum, I enjoyed two tonight for Dessert.  I find them a bit sweeter than the standard Orange and less messy, a win-win for me.  Clementines were first grown in Algeria, allegedly by accident, about a hundred years ago.  For more info on this yummy fruit, check this out:

Frosted Shredded Bite Sized Wheats with Walnuts


Breakfast: Frosted Shredded Bite Sized Wheats with Walnuts
1 cup Trader Joe's Frosted Shredded Bite Sized Wheats
1 cup Fat Free Milk
2 tbsp plain chopped Walnuts
5oz Orange Juice
Regular Coffee, with a splash of Fat Free Milk & 1/2 tsp Pure Ground Cinnamon

Chicken & Black Bean Cakes with Spicy Cilantro Aioli


Lunch: Black Bean Cakes with Spicy Cilantro Aioli & Acorn Squash
Skinless Roasted Chicken Breast with Spicy Cilantro Aioli (recipe below)
Black Bean Cakes with Spicy Cilantro Aioli (recipe below)
Plain Acorn Squash (simply microwaved until soft!)
Decaf Coffee, splash of Fat Free Milk & Pure Ground Cinnamon

Whole Wheat Mushroom Onion & Turkey Pepperoni Pizza

Dinner:  Friends over for Dinner!

Appetizer:
Baby Carrots with Toasted Sesame Hummus (recipe below)
White Wine

Salad: 
2 servings Organic Baby Spinach Salad with Sunflower Seeds, Dried Cranberries & canned No Salt Added Corn tossed in a Tuscan Balsamic Vinaigrette

Meal:  
2 slices Whole Wheat Mushroom, Onion & Turkey Pepperoni Pizza
White Wine

RECIPES:



Black Bean Cakes Recipe:
I came across the below recipe while browsing a cookbook aimed at easy healthy meals for kids:  Weelicious by Catherine McCord.
 

I followed the above recipe except that I substituted broken Corn Tortilla Chips for Bread Crumbs, because we didn't have any.  These came out great, we loved them and served them with the Spicy Cilantro Aioli.


Spicy Cilantro Aioli Recipe:
Into food processor put:
 
Large bunch of Cilantro + 
Equal Parts Olive Oil Mayo & Plain Yogurt + 
Chili Pepper Hot Sauce, to taste 

Puree and serve!  



Toasted Sesame Hummus Recipe:
Into food processor put:
1 clove Garlic
1 can Chick Peas, drained/ rinsed
2 tbsp Tahini
Juice from 1/2 Lemon    
Salt, to taste

While processing, stream in 1 tsp Toasted Sesame Oil & 2 tbsp cold Water.  Serve with another tsp of Toasted Sesame Oil & a couple shakes Cumin.  Serve with Baby Carrots, other raw Veggies or crackers.
