Birthday Cupcakes!

Daily Tidbit:   When your child and one of your best friend's birthdays happen to be in the same weekend, you are bound to overindulge.   But I want to enjoy life and I don't want to be the Mom who won't eat her kid's birthday cake!  So, today there were more decadent desserts to be had and tomorrow is a new day!

Frosted Shredded Mini Wheats with Walnuts
Breakfast: Frosted Shredded Mini Wheats with Walnuts
1 cup Frosted Shredded Mini Wheats
1 cup Fat Free Milk
2 tbsp plain chopped Walnuts
5oz Orange Juice
Regular Coffee, a shake of Pure Ground Cinnamon & a splash of Fat Free Milk

Meatball Sub & Spinach Salad


Birthday Party Lunch: Meatball Sub & Salad
4 small all Beef Meatballs with No Salt Added Organic Marinara &
1 slice of Provolone Cheese on a Potato Roll
Spinach Salad with Dried Apricots, Dried Cranberries & Sunflower Seeds in a Tuscan Vinaigrette
1 cup fresh cut Pineapple
Decaf Coffee, shake of Pure Ground Cinnamon & splash of Fat Free Milk

Birthday Party Dessert: 1 Yellow Cake Cupcake with Chocolate Icing, Water

Pasta & Peas Marinara, Mozzarella Chicken, Avocado & Salad!
Dinner: 
Shell Pasta with Peas in Organic No-Salt Added Marinara
1/2 Avocado, diced
1/2 cup of Chicken Sauteed, chopped and broiled with some Part Skim Mozzarella Cheese
more Spinach Salad:  Dried Apricots & Cranberries, Sunflower Seeds in a Tuscan Vinaigrette
Red Wine

RECIPES:

Cooked Hummus Recipe:
Today I did my hummus a little differently....

Heat Pan on Low
Add 1 tsp EVOO
Add 1 clove Garlic, sliced
Add 1 tsp Cumin
Stir and allow to heat up and become fragrant (1-2 minutes) and remove from heat.

Into Food Processor put:

1 can Chick Peas (drained/ rinsed)
Juice from 1/2 Lemon
2 tbsp Tahini
Garlic, Oil, Cumin mixture from pan   

While processing, stream in another 1 tbsp of EVOO and process to desired consistency.  Serve with more Oil and Paprika on top to garnish.
