Sweet Potato with Sauteed Mushrooms, Onions & Tomato for Lunch

Oatmeal & Raspberry Spinach Smoothie



Breakfast:  Oatmeal with Cinnamon & Walnuts with Smoothie
1/2 cup plain Oatmeal (uncooked),  microwaved with
1 cup 1% Milk
2 tbsp chopped Plain Walnuts &
2-3 shakes of Plain Cinnamon on top
5 oz Raspberry Spinach Smoothie (recipe below)
Regular Coffee, splash 1% Milk

Sweet Potato with Sauteed Mushrooms, Onions & Tomato & Parmesan


Lunch: Plain Sweet Potato with Veggies!
1 Plain Sweet Potato, microwaved until soft, then skinned and topped with Sauteed Mushrooms, Onions & Tomato (sauteed in 1 tbsp Canola Butter mixture)
1 tbsp Parmesan Cheese sprinkled on top 
Decaf Coffee, splash 1% Milk

Snack:  1/4 cup lightly salted mixed Nuts (Brazil nuts, Pecans, Pistachios, Peanuts & Almonds), 1% Milk

Grilled Flat Iron Steak
Dinner: Family Birthday Dinner Out! 

Salad: Field Greens Salad with Fresh Melon, Candied Walnuts, & Blue Cheese crumbles, in a Tomato Vinaigrette
3 Paper Thin Parmesan Toasts
Water with Lemon 

Entree: Grilled Flat Iron Steak with Roasted Root Vegetables & Crispy Leeks, with a Horseradish Demi + a cup worth of my son's Pomme Frites (French Fries!)
Water with Lemon

Dessert:  1/2 slice of Chocolate Cherry Mousse Cake (shared with my son, could not resist!)
Yes, more Water with Lemon!

Raspberry Spinach Smoothie Recipe:



Into Blender put:

1 cup Fat Free All Natural Vanilla Yogurt
1.5 cups Frozen Raspberries
2 Bananas
1 cup Orange Juice
1 Large handful of Spinach

I like this more than the last raspberry smoothie I made - I think the OJ made it a little sweeter and more smooth.  YUM.



Blend and serve!
