Easiest Ever Homemade Peanut Butter Cookies for Dessert!

Oatmeal with Cinnamon & Walnuts with Smoothie



Breakfast:  Oatmeal with Cinnamon & Walnuts with Smoothie
1/2 cup plain Oatmeal (uncooked),  microwaved with
1 cup Fat Free Milk
2 tbsp chopped Plain Walnuts &
2-3 shakes of Plain Cinnamon on top
5 oz Strawberry Spinach Smoothie (recipe below)
Regular Coffee, 1/8 tsp Vanilla Extract, splash Fat Free Milk

Lunch: Spicy Mango Curry Veggies with Beans & Toasted Almonds
Tons of frozen Veggies (16 oz bag of mixed Frozen Vegges:  Broccoli, Red Bell Peppers, Baby Corn, Mushrooms, Onions, Snap Peas & Water Chestnuts and 1 cup frozen Sweet Peas & 1 cup mixed Red, Yellow & Green Bell Peppers) added to hot pan with 1 tbsp Canola Oil & 1/2 tsp Red Pepper Flake, 1 cup White Cannellini Beans, 1/4 cup jarred Mango Curry Sauce & 1/2 cup Reduced Sodium Chicken Broth

I ate approximately 2 cups worth (as shown in pic above)
Topped with 1 tbsp Toasted Raw Almond Slivers  
Decaf Coffee, splash Fat Free Milk

Snack:  1/2 Trader Joe's 72% Cacao Dark Chocolate Bar (.825 oz), Water with Lemon

Baked Artichoke Bean Dip with Spinach

Dinner: 1 cup Baked Artichoke Bean Dip with Spinach (recipe below) 
2 Sourdough Crispbreads
Orange Seltzer

RECIPES:
 

Strawberry Spinach Smoothie Recipe:

Into Blender put:

1 cup Fat Free All Natural Vanilla Yogurt
2 Bananas
1 cup Orange Juice

1 cup Strawberries (frozen, thawed in fridge overnight)
1 Large handful of Spinach

Blend and serve!

Artichoke White Bean Dip with Spinach Recipe:

Preheat oven to 350 degrees and Spray small Casserole Dish with Canola Oil.

Into food processor put:

1 large clove Garlic
12 oz package Artichoke Hearts (frozen and thawed in fridge)
Juice from 1/4 Lemon 
1 cup White Cannellini Beans
1/4 cup Neufchatel Cheese
1/2 cup Grated Parmesan Cheese
2 large handfuls of fresh Spinach
   
Pour into Casserole dish and top with a handful of Grated Part Skim Mozzarella Cheese.  Bake for 45 minutes, or until the top is browned and bubbly.

*Note:  The fresh Spinach introduced more liquid into the dip; I think next time I would use Frozen Chopped Spinach (thawed, with the excess water squeezed out) instead.

Homemade Peanut Butter Cookie Recipe:
I loved this recipe when I saw it in Woman's Day Magazine because it uses only 4 ingredients!  I love it when things are this simple.  I used Unsweetened All Natural Peanut Butter, so the cookies came out a little less sweet than normal.  Next time I'll either use Peanut Butter that contains some sugar OR better yet, just throw some Chocolate Chips in there instead!  No matter what, these were yummy!
